Slow Cooker Sausage, Cabbage and Potatoes

Ingredients

  • 12 to 14 ounces fully cooked smoked sausage or kielbasa sliced into 1-inch rounds
  • 1 small head green cabbage roughly chopped, about 16 ounces
  • 1 pound baby potatoes or Yukon Gold potatoes halved or quartered
  • cup yellow onion diced
  • 2 cloves garlic minced
  • 1 ½ cups low-sodium chicken broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt or to taste

Instructions

  • Prepare the ingredients. Slice the smoked sausage, chop the cabbage, cut the potatoes into evenly sized pieces, dice the onion, and mince the garlic.
  • Add the potatoes, cabbage, smoked sausage, onion, and garlic to a 6-quart slow cooker.
  • Pour the chicken broth over the ingredients.
  • Sprinkle in the smoked paprika, thyme, garlic powder, onion powder, black pepper, and salt. Gently stir to combine.
  • Cover and cook on LOW for 4 to 6 hours or HIGH for 2 to 3 hours, until the potatoes are fork-tender and the cabbage is soft.
  • Gently stir before serving. Taste and adjust the salt and black pepper as needed.

Notes

Use fully cooked smoked sausage or kielbasa for this recipe.
Browning the sausage before slow cooking is optional but adds extra caramelized flavor.
Cut the potatoes into similar-sized pieces so they cook evenly.
The cabbage will shrink significantly as it cooks, so it's fine if the slow cooker looks quite full at the beginning.
For firmer cabbage, add it during the final 2 to 3 hours of cooking on LOW.
Because smoked sausage can be salty, use low-sodium broth and adjust the salt after cooking.
