Instructions

Cooking Steps

  • In a large pot over medium heat, add 2 tablespoons of olive oil and allow it to shimmer. Once hot, introduce 1 medium diced onion and 2 minced cloves of garlic. Sauté for about 5 minutes until the onions are translucent and fragrant.
  • Stir in 4 cups of canned tomatoes and 2 cups of vegetable broth. Sprinkle in 1 teaspoon of sugar, 1 teaspoon of salt, and 1 teaspoon of pepper. Bring the mixture to a gentle simmer and let it cook for 20 minutes.
  • Using an immersion blender, puree the soup directly in the pot until smooth. Return it to the pot over low heat to keep warm.
  • Butter one side of each of the 8 bread slices with 2 tablespoons of butter. Layer 1 cup of cheddar cheese and 2 cups of mozzarella cheese on the unbuttered side, then top with another slice of bread, buttered side out.
  • Heat a skillet over medium heat and place the sandwiches in the pan. Cook for about 3-4 minutes on each side until golden brown and the cheese is melted.
  • Slice the grilled cheese sandwiches and serve them with the warm Tomato Soup.
