  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • ¼ cup cornstarch for crispy texture

  • 1 green bell pepper chopped
  • 1 medium onion chopped
  • 1 cup pineapple chunks

For the Sauce

  • ½ cup vinegar white or apple cider
  • ¼ cup ketchup
  • 2 tablespoons soy sauce
  • ¾ cup sugar for sweetness
  • 2 teaspoons minced garlic
  • 1 tablespoon grated ginger

  • 2 tablespoons water optional for sauce consistency
  • 1 tablespoon cornstarch optional for thickening

Instructions

Step-by-Step Instructions

  • Prepare the chicken by coating 1 lb of chicken pieces with ¼ cup of cornstarch in a bowl.
  • Cook the chicken in a skillet with 1 tablespoon of vegetable oil over medium-high heat for 5-7 minutes until golden brown.
  • Stir-fry the chopped red and green bell peppers and onion in the same skillet for 3-4 minutes.
  • Make the sauce by whisking together vinegar, ketchup, soy sauce, sugar, garlic, and ginger in a bowl.
  • Combine the chicken and stir-fried vegetables in the skillet, pouring the sauce over them and simmer for 5 minutes.
  • Add 1 cup of pineapple chunks and simmer for another 5 minutes.
  • To thicken the sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and add to the skillet if desired.
  • Adjust seasoning with salt and pepper, then serve hot over rice or noodles.

Notes

Crispy chicken is achieved by ensuring it’s evenly coated with cornstarch. Adjust sweetness in the sauce according to preference.
