Ingredients

For the Chicken

  • 1 pound Boneless skinless chicken thighs
  • 2 tablespoons Sweet chili sauce
  • 1 tablespoon Soy sauce
  • 1 teaspoon Grated fresh ginger
  • 2 cloves Minced garlic

For the Rice Bowl

  • 2 cups Cooked jasmine rice
  • 1 medium Red bell pepper, sliced
  • 1 medium Cucumber, diced
  • 1 medium Shredded carrot
  • ¼ cup Chopped cilantro

For the Coconut Lime Drizzle

  • ½ cup Coconut milk
  • 2 tablespoons Fresh lime juice
  • 1 teaspoon Lime zest
  • 1 tablespoon Honey
  • ¼ teaspoon Red pepper flakes
  • Salt and pepper to taste

  • In a medium bowl, combine the sweet chili sauce, soy sauce, grated fresh ginger, and minced garlic. Add the boneless skinless chicken thighs and marinate for at least 20 minutes.
  • Heat vegetable oil in a skillet over medium heat. Add the marinated chicken thighs and cook for about 6-8 minutes per side until golden-brown and cooked through. Remove from heat and slice.
  • Cook the jasmine rice according to package instructions, then fluff and divide into serving bowls.
  • In a small bowl, whisk together the coconut milk, lime juice, lime zest, honey, and red pepper flakes. Season with salt and pepper to taste.
  • Top each bowl of rice with sliced chicken, red bell pepper, cucumber, carrot, and cilantro.
  • Drizzle the coconut lime sauce over each bowl and serve immediately.

Notes

For best flavor, marinate the chicken longer and consider adding more fresh ingredients. Store leftovers properly for best preservation.
