Ingredients

For the Curry

  • 1 large Sweet Potato peeled and diced
  • 1 can Chickpeas drained and rinsed
  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 2 cloves Garlic minced
  • 1 inch Ginger grated
  • 1 tablespoon Olive Oil for sautéing

Cooking Instructions

  • Heat olive oil in a large pot over medium heat. Add minced garlic and grated ginger, sauté until fragrant.
  • Add diced sweet potato and cook for about 5 minutes.
  • Stir in curry powder, ground cumin, and paprika. Cook for another minute until spices are fragrant.
  • Add chickpeas, coconut milk, and vegetable broth. Stir well and bring to a boil.
  • Reduce heat and let it simmer for about 20 minutes, until the sweet potatoes are tender.
  • Season with salt and pepper to taste before serving.
