Equipment

  • Skillet

Ingredients

For the Dish

  • 0.5 pounds pancetta adds a savory, crispy element that enhances the dish’s richness
  • 3 medium shallots brings a subtle sweetness to balance the flavors beautifully
  • 1 teaspoon Dijon mustard introduces a tangy depth that perfectly complements the other ingredients
  • 16 ounces frozen peas a pop of color and freshness that pairs well with the sweetness of the pear
  • 1 whole pear offers a lovely sweetness and juiciness, creating a unique contrast with the pancetta
  • 1 whole lemon juice and zest brightens the dish and keeps the pear from browning
  • 0.5 cups fresh parsley roughly chopped, adds a fresh herbaceous note that enhances aroma and taste
  • freshly ground black pepper to taste, provides an added layer of warmth and spice

Instructions

Instructions

  • Begin by peeling the pear, then slice it into segments and dice them into small cubes. Place the diced pear in a small bowl and drizzle with lemon juice, gently stirring to coat.
  • Heat a large skillet over medium heat, then add the diced pancetta. Sauté for about 4 to 6 minutes, or until the pancetta turns golden brown and crispy.
  • In the same skillet with the remaining pancetta fat, add the thinly sliced shallots. Cook over medium heat for approximately 1 minute, then stir in the Dijon mustard.
  • Introduce the frozen peas and the prepared pear to the skillet, mixing thoroughly. Cook for about 5 minutes, stirring occasionally, until the peas are heated through.
  • Turn off the heat and fold in half of the crispy pancetta along with the chopped parsley and a few grinds of freshly ground black pepper.
  • Transfer the mixture to a serving bowl, topping it with the remaining pancetta and a sprinkle of lemon zest for an eye-catching presentation.

Notes

For best flavor and texture, serve fresh. Store leftovers in an airtight container in the fridge for up to 3 days.
