Begin by peeling the pear, then slice it into segments and dice them into small cubes. Place the diced pear in a small bowl and drizzle with lemon juice, gently stirring to coat.
Heat a large skillet over medium heat, then add the diced pancetta. Sauté for about 4 to 6 minutes, or until the pancetta turns golden brown and crispy.
In the same skillet with the remaining pancetta fat, add the thinly sliced shallots. Cook over medium heat for approximately 1 minute, then stir in the Dijon mustard.
Introduce the frozen peas and the prepared pear to the skillet, mixing thoroughly. Cook for about 5 minutes, stirring occasionally, until the peas are heated through.
Turn off the heat and fold in half of the crispy pancetta along with the chopped parsley and a few grinds of freshly ground black pepper.
Transfer the mixture to a serving bowl, topping it with the remaining pancetta and a sprinkle of lemon zest for an eye-catching presentation.
