Instructions
Step-by-Step Instructions
In a small saucepan, bring 1 cup of apple cider to a gentle simmer over medium heat. Let it reduce, stirring occasionally, until it thickens to about ½ cup, which should take around 15–20 minutes. Remove from heat and cool slightly.
In a large mixing bowl, whisk together ½ cup melted unsalted butter, ½ cup granulated sugar, ½ cup brown sugar, 2 large eggs, ½ cup sour cream, 1 teaspoon vanilla extract, and your cooled reduced cider. Blend until smooth.
In another bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, 1 teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, and ½ teaspoon salt. Ensure all ingredients are evenly distributed.
Gently add dry ingredients to the wet mixture, using a spatula to stir until just combined. Avoid overmixing to maintain fluffiness.
Preheat your oven to 350°F (175°C) while preparing the batter. Grease a 9×5-inch loaf pan. Pour the batter into the prepared pan, smoothing the top.
Place the loaf pan in the preheated oven and bake for 45–50 minutes. It's done when a toothpick inserted into the center comes out clean and the top is golden brown.
Once baked, allow the bread to cool in the pan for about 10 minutes. Then transfer to a wire rack to cool completely.
While the bread is still warm, brush the top with melted butter. Mix 2 tablespoons of sugar with 1 teaspoon of cinnamon, sprinkle over the loaf, and press lightly to stick.
Notes
Ensure to simmer the apple cider until it's thickened to about ½ cup; this concentrates the flavor. Cool properly in the pan to prevent sogginess.
