  • In a small saucepan, bring 1 cup of apple cider to a gentle simmer over medium heat. Let it reduce, stirring occasionally, until it thickens to about ½ cup, which should take around 15–20 minutes. Remove from heat and cool slightly.
  • In a large mixing bowl, whisk together ½ cup melted unsalted butter, ½ cup granulated sugar, ½ cup brown sugar, 2 large eggs, ½ cup sour cream, 1 teaspoon vanilla extract, and your cooled reduced cider. Blend until smooth.
  • In another bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, 1 teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, and ½ teaspoon salt. Ensure all ingredients are evenly distributed.
  • Gently add dry ingredients to the wet mixture, using a spatula to stir until just combined. Avoid overmixing to maintain fluffiness.
  • Preheat your oven to 350°F (175°C) while preparing the batter. Grease a 9×5-inch loaf pan. Pour the batter into the prepared pan, smoothing the top.
