Instructions
Step-by-Step Instructions
Start by heating 1 tablespoon of oil in a large pot over medium heat. Once the oil shimmers, add the chopped onion, minced garlic, and minced ginger. Sauté the mixture for about 3-4 minutes until the onion is translucent and the garlic is fragrant.
Next, pour in 4 cups of your choice of broth along with 1 tablespoon of soy sauce and 1 tablespoon of rice vinegar. Increase the heat slightly and bring the mixture to a gentle simmer for about 2-3 minutes.
Once the broth is simmering, introduce 12-16 potstickers into the pot. Cook them for about 5-7 minutes or according to the package instructions, stirring gently to ensure they don’t stick together.
After the potstickers are cooked, stir in 2 cups of mixed vegetables. Cook for an additional 2-3 minutes until the vegetables are vibrant and just tender.
Taste your potsticker soup and adjust the seasoning if needed, adding more soy sauce or rice vinegar to achieve the perfect balance of flavors.
Ladle the soup into bowls and top with sliced green onion for a fresh crunch. Add a drizzle of sesame oil if desired.
Notes
Fresh ingredients, especially garlic and ginger, enhance the flavor. Adjust seasoning to taste before serving.
