Equipment

  • Large pot

Ingredients

For the Soup Base

  • 1 tablespoon vegetable oil for sautéing
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 inch ginger minced
  • 4 cups broth chicken or vegetable
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar

For the Floating Treasures

  • 12-16 pieces potstickers frozen or fresh
  • 2 cups mixed vegetables spinach, bok choy, bell peppers, and snap peas

For the Finishing Touch

  • 2 stalks green onion sliced
  • 1 tablespoon sesame oil optional

Instructions

Step-by-Step Instructions

  • Start by heating 1 tablespoon of oil in a large pot over medium heat. Once the oil shimmers, add the chopped onion, minced garlic, and minced ginger. Sauté the mixture for about 3-4 minutes until the onion is translucent and the garlic is fragrant.
  • Next, pour in 4 cups of your choice of broth along with 1 tablespoon of soy sauce and 1 tablespoon of rice vinegar. Increase the heat slightly and bring the mixture to a gentle simmer for about 2-3 minutes.
  • Once the broth is simmering, introduce 12-16 potstickers into the pot. Cook them for about 5-7 minutes or according to the package instructions, stirring gently to ensure they don’t stick together.
  • After the potstickers are cooked, stir in 2 cups of mixed vegetables. Cook for an additional 2-3 minutes until the vegetables are vibrant and just tender.
  • Taste your potsticker soup and adjust the seasoning if needed, adding more soy sauce or rice vinegar to achieve the perfect balance of flavors.
  • Ladle the soup into bowls and top with sliced green onion for a fresh crunch. Add a drizzle of sesame oil if desired.

Notes

Fresh ingredients, especially garlic and ginger, enhance the flavor. Adjust seasoning to taste before serving.
