Ingredients

Salad Base

  • 1 head Romaine lettuce
  • 1 cup Black beans rinsed and drained
  • 1 cup Corn kernels fresh or frozen
  • 1 large Red bell pepper diced
  • 1 medium Avocado diced
  • 1 cup Cherry tomatoes halved
  • 0.5 medium Red onion thinly sliced, soaked in water
  • 1 medium Jalapeño pepper minced, adjust for heat preference
  • 0.25 cup Fresh cilantro chopped

Dressing

  • 2 tablespoons Lime juice
  • 4 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt to taste
  • 0.25 teaspoon Black pepper freshly cracked, to taste

Toppings

  • 0.5 cup Feta cheese crumbled

Instructions

Preparation

  • Wash and dry the romaine lettuce thoroughly, then chop it into bite-sized pieces, placing them in a large salad bowl.
  • Add the rinsed and drained black beans, thawed corn kernels, diced red bell pepper, halved cherry tomatoes, thinly sliced red onion, minced jalapeño pepper, and chopped cilantro to the bowl.
  • In a small mixing bowl, combine the lime juice, olive oil, ground cumin, chili powder, salt, and black pepper. Whisk to blend these ingredients until smooth.
  • Pour the freshly whisked dressing over the salad ingredients in the large bowl and gently toss everything together.
  • Carefully fold in the diced avocado to the salad without mashing it.
  • Sprinkle the crumbled feta cheese over the top of the salad.
  • Serve immediately or chill in the refrigerator for up to 30 minutes before serving.

Notes

Use fresh, ripe veggies for the best flavor and chill the salad to meld the flavors beautifully.
