Step-by-Step Instructions
Season lamb shoulder pieces with salt and pepper. Brown in vegetable oil over medium-high heat for 5-7 minutes.
Sauté onion and garlic in the same pot until translucent, about 3-4 minutes.
Return lamb to pot. Add carrots, potatoes, broth, and optional stout. Stir in tomato paste, thyme, parsley, and bay leaves.
Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
Boil diced potatoes in salted water for 15-20 minutes until tender. Drain and return to pot.
Mash potatoes with milk and butter until creamy. Season with salt and pepper.
Remove bay leaves from stew, adjust seasoning, and serve with mashed potatoes.
Garnish with chopped parsley before serving.
