Instructions

Step-by-Step Instructions

  • Season lamb shoulder pieces with salt and pepper. Brown in vegetable oil over medium-high heat for 5-7 minutes.
  • Sauté onion and garlic in the same pot until translucent, about 3-4 minutes.
  • Return lamb to pot. Add carrots, potatoes, broth, and optional stout. Stir in tomato paste, thyme, parsley, and bay leaves.
  • Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  • Boil diced potatoes in salted water for 15-20 minutes until tender. Drain and return to pot.
  • Mash potatoes with milk and butter until creamy. Season with salt and pepper.
  • Remove bay leaves from stew, adjust seasoning, and serve with mashed potatoes.
