In a medium-sized mixing bowl, combine 8 oz of softened goat cheese and 4 oz of softened cream cheese. Blend until smooth, taking about 2-3 minutes.
Stir in ¼ cup of chopped dried cranberries, ¼ cup of finely chopped pecans, 2 tablespoons of honey, ¼ teaspoon each of garlic powder and onion powder, and ¼ teaspoon of black pepper. Mix well for another 2-3 minutes.
Shape the mixture into a ball. Wrap it in plastic wrap or parchment paper and refrigerate for at least 1 hour.
Unwrap the cheese ball and roll it in additional pecans and cranberries on a plate.
Transfer to a serving platter and garnish with fresh parsley if desired. Serve with crackers, sliced bread, or fresh fruit.
