Ingredients

For the Bacon

  • 8 slices thick-cut bacon

For the Sausage

  • 1 pound ground pork sausage

For the Cheese

  • 4 slices mild cheddar cheese

For the Eggs

  • 8 large eggs

For Seasoning

  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper

For the Bread

  • 12 slices white bread

For the Avocado

  • 1 large avocado

For the Spreading

  • 1 tablespoon unsalted butter
  • 1 tablespoon cowboy butter

Instructions

Preparation Steps

  • Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and arrange 8 slices of thick-cut bacon in a single layer. Bake for 25-30 minutes until crispy.
  • Divide 1 pound of ground pork sausage into four equal portions and shape into patties. Cook in a medium skillet over medium heat for 3-4 minutes per side until browned. Add cheese in the last minute to melt.
  • In the same skillet, melt 1 tablespoon of unsalted butter. Scramble 8 large beaten eggs with kosher salt and black pepper until thickened.
  • Toast 12 slices of white bread until golden brown. Spread 1 tablespoon of cowboy butter on one side of each slice.
  • To assemble, layer a sausage patty, bacon, avocado slices, and scrambled eggs between slices of buttered toast.
  • Cut each sandwich into four triangles and secure with toothpicks. Serve immediately.
