Preparation Steps

  • Preheat your oven to 325°F (160°C) and prepare a springform pan by lining the bottom with parchment paper or greasing it.
  • In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press this mixture firmly into the bottom of the springform pan and bake for 8 to 10 minutes. Allow to cool.
  • In a large mixing bowl, beat together cream cheese and granulated sugar until creamy. Add sour cream and vanilla extract, then blend until smooth.
  • Incorporate eggs one at a time, mixing gently. Gradually mix in cream soda, then set this mixture aside.
  • In a saucepan, combine heavy cream, brown sugar, and unsalted butter. Stir until it reaches a gentle boil, then simmer for 2 to 3 minutes.
  • Stir in vanilla extract and divide the butterscotch mixture into four bowls, coloring each with gel food coloring.
  • Pour the cheesecake batter into the crust, drizzle the colored butterscotch mixtures over, and swirl gently with a toothpick.
  • Bake for 50 to 60 minutes until the edges are set and the center jiggles slightly. Let cool gradually in the oven.
  • Transfer the cheesecake to the refrigerator and chill for at least 4 hours or overnight before serving.
  • Before serving, drizzle additional colored butterscotch swirls on top for decoration.
