Ingredients

For the Cheesecake Filling

  • 16 oz cream cheese softened to room temperature
  • ½ cup granulated sugar balances the tanginess
  • 1 teaspoon vanilla extract adds warmth
  • 8 oz whipped topping such as Cool Whip
  • 1 cup graham cracker crumbs for crust flavor

For the Blackberry Swirl

  • 1 cup fresh or frozen blackberries using seasonal berries
  • 2 tablespoon granulated sugar to sweeten
  • 1 teaspoon lemon juice to brighten flavor

For the Coating and Decoration

  • 12 oz dark chocolate melting wafers for coating
  • edible glitter or luster dust for decoration
  • crushed graham crackers or chopped nuts optional for texture
  • candy eyes or small edible decorations optional for fun

Instructions

Preparation

  • In a small saucepan, combine 1 cup of blackberries, 2 tablespoons of granulated sugar, and 1 teaspoon of lemon juice. Cook over medium heat until thickened, about 5–7 minutes.
  • In a mixing bowl, beat 16 oz of softened cream cheese and ½ cup of granulated sugar until smooth. Mix in 1 teaspoon of vanilla extract and 8 oz of whipped topping, then fold in 1 cup of graham cracker crumbs and half of the cooled blackberry mixture.
  • Line a baking sheet with parchment paper. Roll the cheesecake mixture into balls and place on the sheet. Insert a lollipop stick into each ball and freeze for at least 1 hour.
  • Melt the dark chocolate melting wafers and dip each frozen cheesecake ball into the chocolate until coated. Return to the baking sheet.
  • Immediately sprinkle with edible glitter, crushed graham crackers, or add candy eyes before the chocolate sets. Drizzle with remaining blackberry compote.
  • Chill in the refrigerator for 15–20 minutes to set the chocolate coating.

Notes

Ensure cream cheese is at room temperature for best mixing. Use quality chocolate for superior flavor. Allow pops to freeze thoroughly for easy dipping.
