Remove chicken and in the same skillet, melt the butter.
Stir in honey, cinnamon, nutmeg, and vanilla; cook for 1–2 minutes.
Return chicken to skillet, coating it with the butter mixture.
Roast the chicken in the preheated oven for 20–25 minutes.
Baste the chicken halfway through the cooking time.
Let the chicken rest for 5 minutes after cooking.
Garnish with chopped cilantro before serving.
