  • Pat dry chicken and sprinkle with salt.
  • Brown chicken in olive oil for 6-8 minutes.
  • Cook bacon until crispy, about 5 minutes.
  • Sauté shallots and celery, adding thyme and garlic.
  • Deglaze with brandy, cooking for 2-3 minutes.
  • Make sauce by adding flour, stock, and cider.
  • Combine chicken and bacon, boiling the mixture.
  • Cover and bake for 30 minutes.
  • Uncover and bake for an additional 30 minutes.
  • Fry apple wedges until golden, about 5-7 minutes.
  • Stir in cream and bake uncovered for 20 minutes.
