Heat olive oil in a Dutch oven over medium-high heat. Season the beef cubes with salt and pepper. Sear the beef for 4-5 minutes until browned. Remove beef from pot.
Add chopped onion, carrots, and celery to the pot. Cook for 5-7 minutes until vegetables soften. Stir in minced garlic and sauté for an additional minute.
Pour in red wine, scraping the pot's bottom to release browned bits. Simmer for 2-3 minutes.
Return the beef, add beef broth, diced tomatoes, oregano, and thyme. Bring to a gentle boil, reduce heat, and simmer for 1.5 to 2 hours.
In a separate pot, boil salted water. Cook pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
Once the beef is tender, taste the sauce and adjust seasoning. Gently stir in cooked pasta and let sit on low heat.
