  • In a large pot, bring salted water to a vigorous boil over high heat. Add the trottole pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta in a colander and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced beef, seasoning it with salt and pepper. Break up the beef and cook until browned, about 5-7 minutes. Transfer beef to a plate and set aside.
  • In the same skillet, add chopped onion and cook for 3-4 minutes until translucent. Then, add minced garlic and sauté for another 30 seconds until fragrant.
  • Pour in diced tomatoes, tomato paste, and Italian seasoning. If using, add red pepper flakes and stir together. Let the sauce simmer for about 5 minutes to meld flavors.
  • Return cooked minced beef to the skillet. Stir to combine with the sauce, then add the trottole pasta and toss gently until coated.
